This is my revised version of the microwave recipe of the Chicken-Sweet Potato Pie so that I would be able to eat it as I have a limited diet for various reasons.

Servings: 1 (9 in) pie plate
Prep Time: 15 min Cook Time: 30 minIngredients
2 cups frozen box peas and carrots
2 cups cooked, cut-up chicken
1 (18 oz.) can vacuum packed sweet potatoes
1 egg
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon allspice
White sauce:
3 tablespoons milk-free margarine
3 tablespoons flour
1/2 teaspoon salt
1 1/2 cups lactose-free milk
Directions
1. Cook frozen peas and carrots on stove, and drain.
2. While cooking the peas and carrots, combine sweet potatoes, egg, and spices in mixing bowl. Mash. Line 9-inch pie plate with potato mixture, building up edges 1/2-inch higher than plate.
3. Prepare white sauce; then add the veggies and chicken. Spoon this mixture into the sweet potato crust.
4. Loosely cover pie pan with aluminum foil and bake in 350 degrees oven for 30 minutes.
