Hearty (but quick) Italian Sausage Soup (adapted from All Recipies Italian Sausage Soup with Tortellini)

1 pound sweet Italian sausage, casings removed
1 chopped onion
2 cloves garlic, minced or pressed
4 cups beef broth
1 cup red wine
1 (14.5 oz) can chopped tomatoes, with juice
1 bulb fennel, sliced
2 sliced carrots
1 Tbsp Italian Herb Blend
1 (8 ounce) can tomato sauce
2 zucchinis, sliced
8 ounces fresh tortellini
3 tablespoons chopped fresh parsley
Parmesan Cheese
Directions
Brown sausage; drain grease. Add onion and saute until golden. Add garlic and cook just a minute until fragrant. Add liquids, tomatoes, carrots, fennel, and herbs. Simmer on low for 30 to 45 minutes. Add zucchini and cook for an additional 20 minutes. Add Tortellini and cook an additional 10 or 15 minutes, or until pasta is cooked. Stir in fresh parsley and serve with Parmesan cheese on top.
