How can I describe this cake but light and airy. I made it last night. I will try making it ofen with different fruits in place of the orange slices. It is very tasty!
Difficulty: Easy
Servings: 24
Ingredients
1 (18 oz.) yellow cake mix
4 eggs
1/2 cup oil
1 (11 ounce) can mandarin oranges and juice
15 ounce can crushed pineapple (I used unsweetened)
1 small box vanilla pudding mix ( cook kind)
9 oz. Cool Whip ( I used French Vanilla)
Directions
Preheat oven to 350 degrees. Mix together cake mix, eggs, oil, and mandarin oranges and juice; pour into a 9 by 13 inch greased and floured pan. Bake for 30 minutes or until done, cool. (It also made enough batter for two mini loaf pans).
Mix pineapple with pudding powder and Cool Whip. Spread over the cooled cake. Keep this cake refrigerated.

Bonny says:
Did you drain the crushed pineapple or include the juice?
