This is a loaded baked potato in a salad only easier! This can be doubled and doubled again for more people!

Servings: 6 - 8 people
Ingredients
2- 3 lbs baking potatoes
Olive Oil for baking
¼ lb bacon
1/2 stick butter, softened
¼ cup real mayo (not Miracle Whip!!)
½ – 1 c sour cream
salt and pepper
3- 4 green onions chopped finely tops and all
1 cup cheddar cheese, shredded
Directions
Preheat the oven to 400. Pierce the potatoes with a fork and rub with oil. Bake until tender, about 1 hour. Let cool, then cut into bite size pieces.
In a skillet, cook the bacon until crisp. Cool and crumble.
In a large bowl, combine the butter, mayo and sour cream. Season with salt and pepper. Stir in the potatoes, bacon, onions, and cheese. Serve warm or at room temperature.
