6 pork chops
coarsely ground pepper
2 Tbsp vegetable oil
1 lemon, sliced
1 1/4 cups raw rice
Sprinkle pork chops on both sides with seasonings and brown well in oil. Place lemon slices on top of pork chops, add water to cover. Simmer about 35 minutes. Remove pork chops from skillet leaving 3 cups liquid in pan. Lemon slices should also remain. Add rice, cover and simmer for 25-30 minutes. Pork chops may be returned to skillet for reheating.
