Another yummy recipe from my late former Mother-in-Law. Best one I have ever found.
Difficulty: Easy
Servings: 2 loaves
Ingredients
3 Eggs
2 cups Sugar
1 ½ tsp. Cinnamon
1 tsp. Salt
2 cups grated zucchini
3 cups flour
2 tsp. baking soda
½ tsp. baking powder
1 cup oil
2 tsp. vanilla
¾ cup nuts, chopped
1 cup crushed pineapple, drained
Directions
Beat eggs until fluffy. Add sugar, oil, vanilla, zucchini, flour, baking powder, soda and salt. Stir in pineapple and nuts. Mix all well and bake in two greased loaf pans at 350 degrees for one hour.
