Please bury me with a bowl of this soup when I die! My friend Sharon made this for a soup luncheon and Ihounded her for the recipe. This is a wonderful hearty soup. It freezes well.

Prep Time: 20 minutes Cook Time: 1 hourIngredients
1 lb sweet Italian sausage, casings removed
1 lg onion, chopped
4 lg cloves garlic, chopped
5 C beef broth or beef stock
2 C diced, seasoned, peeled tomatoes, canned or fresh
1 C tomato sauce or spaghetti sauce
1 C red wine (burgundy or other)
1/3 C water
1 C shredded carrots
1 pkg sliced mushrooms
1 pkg thawed and drained frozen spinach
1 Tbsp fresh basil, chopped
1 Tbsp fresh oregano
1 lb cheese tortellini
Directions
Place sausage in large pot over medium heat. Saute for 10 minutes or until well browned. Use a slotted spoon to remove sausage. Reserve 1 Tbsp fat in pan and brown garlic and onions. Return sausage to pot.
Add broth, water, wine, tomatoes, carrots, mushrooms, basil, tomato sauce, oregano, spinach. Bring to a boil, reduce heat to low and simmer 30 minutes, skimming any fat.
Add the tortellini and simmer 10 more minutes.
Serve with grated Parmesan.

Thanks for this recipe–I made it last night and both my boyfriend and I loved it! I didn’t have spinach, so I used what I had (arugula and asparagus) and it was great!
