This is more a bread than a muffin, with a good crunchy crust and a chewy texture to the insides. I love them because they aren’t too sweet and are really very satisfying. I like using currents or golden raisins (Sultanas). I prefer the caraway seeds in them, but it’s a matter of taste. I do suggest trying them at least once, the flavour they add to this dough might just surprise you. Enjoy!

Ingredients
1 ½ c raisins, currents or other dried fruit of choice
½ c sugar
3 c flour
3 tsp baking powder
dash of salt
1 Tbls. Caraway seeds (optional)
1 ¼ c milk
1 egg
Directions
Preheat oven to 350º f
Grease loaf pan or muffin tins
Mix dry ingredients in a bowl, add in dried fruit and toss, then add eggs and milk and mix (but do not over mix)
Place in well greased pan or muffin tins.
Bake pan for approx 45 minutes, individual muffins for approx 20-25 minutes depending on size of tins.
