I reworked a few recipes to come up with this cookie and around here it is an all time winner 🙂
Difficulty: Easy
Servings: 2 dozen
Prep Time: 15 minutes Cook Time: 8-15 minutes per sheetIngredients
1 cup lard
1 cup peanut butter
1 cup sugar
1 cup packed brown sugar
3 eggs
3 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 teaspoon Hideaway Haven Vanilla
Directions
Cream lard, peanut butter and sugar until light and fluffy.
Add eggs one at a time beating well with each addition.
Add vanilla mix well.
In another bowl combine flour, baking soda and salt mix well.
Add dry mix to to creamed mixture. Blend well.
Roll into 1 1/2 – 2 inch balls. Place on un-greased cookie sheet. Flatten with meat mallet or fork if you must…
Bake at 375 for 8-15 minutes or until lightly brown. Remove to wire racks.
Variations
1. add a bag of chocolate chip (yum)
2. remove 1/8 cup flour, add 1/4 cup wheat germ and 1 tablespoon Psyllium
