A wonderful salad to enjoy anytime of year. Especially good with garden fresh vegetables.

2 cucumbers 4 roma tomatoes 1 green pepper sliced
1/2 small onion sliced
1/2 cup oil, 1/2 cup red wine vinegar, pinch garlic powder, 1/2 tsp black pepper, 1-1/2 tsp salt,
1-1/2 tsp sugar, 1 TBSP oregano
Directions
Make in a medium bowl. Peel cucumbers, cut in 1/2 length wise, chop in 1/2 inch slices. Cut tomatoes into 1/2 inch slices then cut each slice in 1/2. Add sliced peppers and onion.
In a small bowl add remaining ingredients, whisk together. Mix with veggies, cover. Let marinate for a few hours
