A very good soup. Can add or take away vegetables, use leftovers etc.

Servings: 5 or more servings
Cook Time: 1 1/4 hoursIngredients
1 pound ground beef, ground turkey, leftover meatloaf, or roast beef. (I imagine sausage could be used also)
2 cups potato, diced
1 cup carrots, sliced
1 cup onions, chopped
1 cup celery, chopped
1 small can green beans, drained
1 can tomato juice (46-48 oz can)
2 cups water
salt and pepper to taste
Directions
Brown meat, crumbling up as it cooks; drain off fat. Peel or chop all vegetables.
Combine meat, vegetables, tomato juice and water in large kettle; add seasonings.
Simmer for 1 1/4 hours or until vegetables are tender.
