These are good any time of day. Excellant for breakfast, wonderful with split pea soup. They are perfect in a lunch bag with an apple.

Servings: makes 12 muffins
Prep Time: 15 minutes Cook Time: 20-25 minutesIngredients
1 cup all purpose flour
1 cup old fashioned rolled oats
1 Tablespoon baking powder
1 cup of diced ham
1 cup diced sharp cheddar cheese
1 extra large egg or 2 medium eggs
2/3 cup milk
2 tablespoons bacon fat
pinch of crushed hot peppers (optional)
Directions
Cut into half half inch dice one cup of cooked ham and one cup of sharp cheddar cheese. Blend these with the flour, oatmeal, baking powder. Add the eggs and milk mix until just blended and all of the dry is moist. Bake in greased muffin tin at 425 for 20-25 minutes.
