This is a delicious Tex-Mex version of meat loaf from Gonzales, Texas that I found in Southern Living magazine. I usually serve it with mashed potatoes and Ranch Style beans, which can be found now outside of Texas!

Servings: Serves 4-6
Prep Time: 20 minutes Cook Time: 1 hourIngredients
2 pounds ground sirloin or lean ground beef
3 large eggs, lightly beaten
1 cup dry bread crumbs
4 garlic cloves, minced
1 medium red onion, chopped
2 plum tomatoes, seeded and chopped
1 1/2 cups (6 oz) shredded Monterey Jack cheese
1/4 to 1/2 cup firmly packed brown sugar
1/2 cup chopped fresh cilantro
1/4 cup Worcestershire sauce
2 Tbsp hot sauce, more if you like spicy
2 teaspoon salt
1 teaspoon pepper
Directions
Combine all ingredients. Pack into a loaf pan.
Bake at 350 degrees for 45 minutes, then increase heat to 425 degrees and bake 15 more minutes or until done.
Let meat loaf stand 10 minutes before serving.
