I love to add chopped lettuce, tomato, sliced black olives and sliced green onions to the top of my helping on a plate. Perhaps some sour cream added and always….guacamole!!!

Servings: 4 to 6 servings
Prep Time: 10 mins or so Cook Time: 20 minsIngredients
1 lb very lean ground round
1 onion, chopped
3/4 to 1 tsp salt
1/4 tsp pepper
1 Tbsp chili powder
1 8 oz tomato sauce
6 corn tortillas
1 4 1/2 oz can chopped ripe olives
1 cup (4 oz) grated cheddar or colby cheese
1 cup water
Directions
Brown ground beef and onion; drain fat. Add seasonings and tomato sauce.
In a 2 quart casserole alternate layers of tortillas, meat sauce, olives and cheese. Add water (don’t worry, the tortillas soak up all the water) and cover.
Bake in 400 degree oven for 20 minutes.
