I can put together this quiche and have it in the oven in less than 10 minutes. There’s no crust to worry with and you can make it any way your family likes. This can be a quick and easy dinner or a make-ahead breakfast/brunch entree.

Prep Time: 10 Cook Time: 30-40 minutesIngredients
6-8 eggs, beaten well
1/2 cup cottage cheese
1/2 cup grated cheese (I use cheddar, gouda, colby, jack, whatever is in my fridge)
leftover ham, bacon, steak, sausage, whatever meat you like
chopped veggies of your choice (I use onions, peppers, broccoli, leaks, shallots, tomatoes, asparagus, whatever is leftover in the fridge)
freshly ground black pepper
Italian seasonings or other choice of seasonings
I sometimes add a dash of nutmeg, or hot sauce
Directions
This quiche is simple and easy and can be anything you choose it to be. Keep the mixture of cheeses and eggs the same and then add additions that you choose.
Sprinkle any add-ins on the bottom of a greased pie pan. Mix eggs, cottage cheese and grated cheese and seasonings. Pour over add-ins. Bake in a 350-degree oven for 30-40 minutes or until set in middle.
