Morgan got this recipe from her history teacher. She had to make it for a class cultural day. She wanted to make it in advance for us to try first and we loved it! We will definitely be making it again. Great flavor–and very easy to fix!

Prep Time: 10 minutes Cook Time: 30 minutesIngredients
1/3 cup honey
3 tablespoons water
3 tablespoons prepared mustard
2 tablespoons margarine or butter, melted
3 teaspoons Cajun seasoning
3 teaspoons curry powder
1 teaspoon lemon juice
6 skinless, boneless chicken breast halves
3 cups hot cooked rice
Directions
In a 1/2 quart casserole dish or 8 x 8 pan, combine everything but the chicken and rice. Add chicken breast halves, turning to coat with mixture. Arrange in a single layer. Bake at 350-degrees for 30 minutes or until done. Meanwhile, cook rice. Serve chicken and pan drippings over hot rice.
