A quick yummy appetizer that everyone loves. Best of all they are definitely finger food and not messy to eat!
Difficulty: Easy
Servings: Approx. 25 sandwiches
Prep Time: 45 minutes Cook Time: NoneIngredients
8 oz Cream cheese (softened)
1 package (dry) Zesty Italian dressing mix
1 English cucumber
Dill weed (dried)
1 package cocktail-sized Pumpernickel Bread
Directions
Mix together softened cream cheese and the package of Zesty Italian dressing mix. I like to refrigerate my mixture overnight to meld the flavors, but it is not necessary. Cut cucumber into slices about 1/4 inch thick. Place round cucumber slices on a paper towel covered plate, cover with another layer of paper towels and allow to sit 30 minutes so that some of the moisture is drained away. Spread a layer of the cream cheese mixture (1-2 tsp) on each slice of bread. Place a cucumber slice on top of the cream cheese mixture and sprinkle with dill weed. Eat and enjoy!
