This is a good vegetarian dish, but you can add Andouille sausage, if you like.

Prep Time: 20 minutes plus soaking of beans Cook Time: 1 1/2 hoursIngredients
1 lb. dried black beans
1 large onion, chopped
1 medium green pepper, chopped
6 cloves garlic, minced
¼ cup olive oil
4 cups water
1 (6 oz.) can tomato paste
1 tsp sugar
1 tsp pepper
1 ½ tsp cumin seeds
1 Tbsp red wine vinegar
2 ½ tsp salt
Hot cooked rice
Shredded cheddar cheese
Chopped tomato
Chopped green onion
Directions
Sort & wash beans; place in large dutch oven. Cover with water 2 inches above beans. Let soak 8 hours OR quick soak according to package direction. Drain well.
Saute onion, green pepper, & garlic in oil until tender.
Combine beans, sauteed veggies, water, tomato paste, sugar, pepper, and cumin seeds in dutch oven; bring to a boil. Cover, reduce heat, & simmer for 1 1/2 hours or until beans are tender stirring occasionally.
Stir in red wine vinegar & salt. Serve over hot rice and garnish with cheese, tomato, & green onions.
