Servings: 4 to 6Prep Time: 30 minutes Cook Time: 30-35 minutes
½ cup water
¼ tsp salt
1/3 cup quick cooking grits, uncooked
1 (12 0z.) can evaporated milk
1 ½ cups chopped, cooked ham
1 cup shredded cheddar cheese
1 Tbsp fresh parsley
1 tsp dry mustard
1 –2 tsp hot sauce ( I use 2 of Cholula)
3 large eggs, beaten
Bring water & salt to a boil in large saucepan; stir in grits. Remove from heat; cover & let stand 5 minutes. Mixture will be thick.
Stir in milk & remaining ingredients. Pour into greased 9-inch quiche dish or deep-dish pie plate.
Bake @ 350 degrees for 30-35 minutes. Let stand 10 minutes before serving.
