A wonderful apple butter that really tastes like a caramel apple. My family has come to expect this for Christmas, and it is loved by all!
Difficulty: Easy
Servings: 7 - half pint jars
Ingredients
3 pounds apples (any kind)
2 cups sugar (white or brown or combination)
2 Tbsp cider vinegar
1/4 tsp ginger
1/2 tsp cloves
1 tsp cinnamon
44 caramels (unwrapped if individually wrapped)
Directions
Puree apples using favorite method. Place 7 cups of apple puree in a crock pot with sugar. (If your crock pot is large enough, this can be doubled.) Cook the pulp down (uncovered) over high heat setting, until a butter consistency is reached. (This takes me about 3 – 4 hours.)
Stir in the spices, vinegar and caramels. Heat through, stirring to melt caramels. Check temperature with a thermometer. This needs to be between 140 and 165 degrees. (Higher is better.) If crock pot can’t get hot enough, transfer to a pan and heat on the stove, stirring constantly to avoid scorching.
Fill prepared jars to within 1/2 inch of top and cap with two piece lids. Seal and water bath process for 10 minutes (pints or smaller.)

Blyss, I registered today just so I could review your recipe! Never having made apple butter before, I made another recipe that was good, but entirely too much trouble. After doing a more thorough review, I gave yours a try. After the first bite, I’ve quit looking. This is now my Go To recipe! No one would ever guess how easy this was, by the taste of it. I’ve renamed it, Caramel Apple Butter Blyss. Thanks for sharing what will become a new fall tradition around here.
