A healthy homemade version of the store bought ones. Kids love them!! Adapted this from the All Recipes version.

Servings: 18
Prep Time: 10 minutes Cook Time: 22 minutesIngredients
4 1/2 cups old-fashioned rolled oats
1/4 cup wheat germ
1/4 cup flax meal
1 cup whole wheat flour
1 tsp baking soda
1 tsp vanilla
1 cup softened butter
1 cup honey
2 cups mix-ins
Example: 1 cup mini chocolate chips, 1/2 cup sunflower seeds,1/4 cup dried cranberries, 1/4 cup raisins. Just keep the total amount to 2 cups.
Directions
Preheat oven to 325. Grease a 9 X 13 pan.
Mix together oats, flour, wheat germ, flax meal, baking soda, vanilla, butter and honey. Stir in 2 cups of mix-ins.
Firmly press mixture into pan. Bake 18 – 22 minutes or until golden brown. Again press firmly into pan once removed from oven. Let cool completely in pan then cut into bars. Store in airtight container.

ARG – I just got back from the store where I bought the ingredients to make these. BUT I forgot that I needed the old fashioned style rolled oats. All I have are the quick cook type. Would these work??

I’ve tried several granola bar recipes and the idea of this chewy version is very appealing, better survival in a purse … I may replace some of the honey with apple juice concentrate. If it helps, the chewiness will be thanks to the old-fashioned oats. The quick cooking oats will make a softer, more melt n’ the mouth cookie. Wait, there’s an idea …..

hmmmm…. well, I went ahead and made a batch with the quick cooking oats I had on hand. I don’t think my 2 and 4 yr old kids will be opposed to a melt in the mouth cookie for breakfast! LOL I may actually be better for my little guy than the chewy version. So far every type of cereal bar I’ve tried has been rejected by my kids. Probably because they miss the fun of picking them out of the box and unwrapping them!

I felt obligated to test these tonight. MMMMMMmmmmmm…. yes, they are not super chewy with the instant oats, but very very good. The kids will put them to the real test in the morning!

These are now a staple in our house. I cut and wrap them individually and keep them in a basket where the kids can reach them. No more store bought bars for us!!

I made these about a week ago and used mini chocolate chips and marshmallows , though I had to compensate and use some molasses because I didn’t have enough honey but it turned out pretty good 🙂 , I’m planning on making some more tomorrow using pecans and almonds and another with strawberries and blueberries :).
