I quit buying dry cereal when I found out how really easy it is to make my own. My husband (Mr. Skeptic) thought I was nuts, but now he loves it. Make this your own by playing around with the ingredients. I made it using pecans and dried cranberries last night. The maple syrup can be switched out for honey or brown sugar syrup fr a different taste. Oh, and all measurements are ish-ish.

Servings: 10 one cup servings
Prep Time: 10 minutes Cook Time: 30-45 minutesIngredients
7ish cups old fashioned oatmeal
1 cup flax meal
1ish cups sliced almonds
1 7oz package coconut
1/2 cup canola oil
3/4 cup maple syrup
1 heaping tablespoon cinnamon
1ish cup chopped dried cherries
Directions
Mix oatmeal, flax, nuts and coconut in a VERY large bowl (I use a roasting pan).
Stir the oil, maple syrup and cinnamon together in smal saucepan and bring to boil.
Pour the oil mixture over the oatmeal mixture and stir to coat well.
Spread mixture in roasting pan or on large cookie sheet. If you use a cookie sheet, be careful or it will fall all over your oven. Cook in 350 degree oven, stirring every 10 minutes for 30 minutes or until lightly browned. I usually have to do this in two batches.
Chop cherries as small as you want them and stir into cooled mixture. Store in airtight container.
