These are a spicy but very tasty cheese cracker. Taken from a cookbook by the Auburn University, Alabama Cooperative Extension Service 1987.

Servings: 2 1/2 dozen
Cook Time: 10 - 20 minutesIngredients
1/2 cup butter
2 cups grated cheddar cheese
salt to taste (optional)
1/4 – 1/2 teaspoon cayenne
1 1/2 cups plain flour
Directions
Beat butter until it is soft and smooth. Gradually add grated cheese, beating after each addition. Continue to beat until mixture is light and creamy. Add salt and cayenne. Gradually add flour, mixing well after each addition.
Put dough through cookie press. Or chill dough thoroughly and place on a lightly floured board. Roll dough until it is 1/8 to 1/4 inch thick. Cut in strips and place on ungreased cookie sheet.
Bake at 350 degrees for 10 to 20 minutes. Remove from pan and cool on racks covered with absorbent paper.
