Easy, delicious, and just a little bit different.

8 medium bananas
1/4 cup butter or margarine
3/4 cup brown sugar
3/4 cup orange juice (or rum! go ahead)
1 teaspoon ground cinnamon
Crumble topping–
1 cup all-purpose flour
1 cup sugar
1/4 teaspoon salt
1 large egg
1/2 cup butter or margarine
Directions
The bananas for this recipe should be firm.
Melt butter in a large skillet over medium-high heat. While melting the butter, cut the bananas in half. Then slice each half lengthwise. Add the brown sugar to the melted butter then place the banana slices in the pan. Cook for about one minute. Carefully turn the bananas in the mixture. Pour in the orange juice (or rum) and add the cinnamon. Turn the heat up to high and boil down the bananas in the sauce for several minutes. Keep an eye on the sauce–-don’t let it burn. You’ll end up with a nice, thick sauce. Transfer the bananas and sauce to an 8 x 8 greased dish. In a medium-size bowl, combine flour, sugar, salt, and egg. Stir into a crumble mixture. Spoon over the bananas. Cut butter over the crumble mixture. Bake at 350-degrees for 45 minutes, until crumble top turns golden brown. Serve warm with vanilla ice cream.
You could also add a handful of raisins and/or nuts, or a hint of ground cloves for a more spicy sauce.
