This is really good! I’ve been known to eat it straight out of the pan… Adapted from about.com

Servings: 6-8
Prep Time: 5 minutes Cook Time: 10 minutesIngredients
2 cups Fresh or Frozen Blueberries
1/3 cup Sugar
1 – 2 Tablespoons Fresh Lemon Juice
Dash Salt
½ teaspoon Vanilla Extract
2 Tablespoons Cornstarch
Directions
1. Rinse the blueberries. Put in small saucepan. Add sugar, lemon juice and salt. Mix together and bring to a boil. Add vanilla and cornstarch. Keep cooking and stirring until mixture thickens and blueberries are popped.
2. Serve warm over French Toast, pancakes or waffles. Can also be served over puddings, cake, or ice cream. (Try as a pie or tart filling)
