This is a wonderful way to preserve fresh basil from the garden without drying it. I read the idea of freezing the mixture in freezer bags in a newsletter from Jane Snow. I felt clever and adapted it into frozen cubes.

Ingredients
Huge bunch of Fresh Basil
Extra Virgin Olive Oil
Ice Cube Trays
Directions
Gather a huge bunch of fresh Basil.
Process in a blender, trickling in extra virgin olive oil while blending. Blend until you have a pourable consistency.
Pour into ice cube trays and freeze immediately.
Once the cubes are frozen remove them from the trays and store in the freezer in a bag. Pull them out one at a time whenever you need them.
Pull these out during the winter to whip up pesto or just to add to soups.
