My Aunt Ruth gave me this recipe at least 20 years ago and it is still a favorite in the summer months. The Johnnys’s Salad Elegance is what makes it so good!

Servings: 8-10
Prep Time: 20 minutesIngredients
1 pkg large seashell pasta, cooked (don’t overcook – just barely al dente), drained and cooled
4 firm tomatoes or 1 small container small cherry or plum tomatoes (sometimes I cut the cherry tomatoes in half)
4 firm cucumbers
2 green peppers or 1 green and 1 red
1 sweet onion or 1 purple onion
1 (12 oz) bottle Kraft Zesty Italian dressing
1/2 of the 2.75 oz size of Johnny’s Salad Elegance
Directions
Cut the cucumbers, peppers and onions into pieces about the size or perhaps a bit larger then the pasta. Add the Italian Salad Dressing and the Johnny’s Salad Elegance. Allow to sit in the frig for several hours for the flavors to blend.
I usually add 1 can of drained medium olives and sometimes add the small to medium frozen cooked shrimp.

Also, how much Italian Dressing do you use?

I have one of those “add bottled Italian dressing” recipes, and I could not tell you how much because it varies each time you do it. It may depend on how much the pasta will soak up, and I frequently add more after it has chilled a while.

Just did a search and found that this is the Johnny’s that makes “Jamaica Me Crazy!” Now, if we could just remember if we have seen that locally, or on a cooking show, or just where!

I am so sorry about leaving the most important part out of this recipe. I use at least 1 12qz bottle of Kraft Zesty Italian dressing and sometimes do need to add a bit more and I use 1/2 of the 2.75oz size of Johnny’s Salad Elegance which is usually in the larger grocery stores. I live in the Seattle area. And if I add shrimp, I add the cooked frozen shrimp. I see they sell the Salad Elegance on their website.

Diane, don’t give it another thought! Getting everything properly lined up in all the right squares can be confusing, especially if you get interrupted in the middle of it. (How do I know?? Because it’s happened to me more than once! But I get to use that edit button some of us have and fix it, with any luck before too many folks notice it.)
