This is a wonderful quick bread using home canned pie fillings, any kind will work! Would be wonderful as a muffin also!

Servings: 2 loaves
Prep Time: 20 min Cook Time: 1 hour 50 minIngredients
1 ½ cups oil
3 eggs
1 teaspoon vanilla extract
3 cups flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 (20 ounce) can cherry pie filling
1 1/2 cups chopped pecans
Directions
Beat together oil, eggs and vanilla.
Sift dry ingredients together and add to egg mixture.
Stir in cherry pie filling and nuts by hand.
Pour into 2 greased and floured loaf pans.
Bake at 350° for 50 minutes to 1 hour.
