This rice is sooooo good with or without a vegetable and so easy to make.

Prep Time: 10 minutes Cook Time: 20 minutesIngredients
1 Tablespoon Extra-Virgin Olive Oil
1/4 cup Onion, finely chopped
1 cup Rice, long or medium-grain
2 cups Chicken Broth
1/2 teaspoon Salt
1/4 cup plus Parmesan, grated
2 Tablespoons Butter
2 cups your choice of vegetable — Broccoli / Asparagus / Carrot, chopped
Directions
1. In a large saucepan or frying pan, heat the olive oil. Add the onion and sauté for 5 minutes. Stir in the rice until coated and toasted a bit. Add in the broth and salt. Heat to boiling.
2. Cover and cook over medium heat until rice is tender, approx 15 minutes.
3. While rice is cooking, steam your choice of vegetable until tender.
4. When rice is done, stir in the Parmesan and Butter. Top with steamed vegetable, if using.
