This is a recipe that I came up with a couple of years ago and we now use for big picnic and pig roast feeds. I decided that I needed to type it up and store it since the paper it’s written on has seen better days!! I skip the bacon when making a really big batch. I make up the “goo” (everything but the beans) in a one gallon jug the night before. Looks weird as a recipe, but it’s always a hit!!

Servings: 80+
Ingredients
6 – 40 ounce cans pork & beans
1 lb. bacon (optional)
2 to 3 cups diced onion (or ½ cup+ dehydrated/minced)
1 cup Coke (flat is fine)
2 cups brown sugar (packed)
2 cups catsup
1/4 cup prepared yellow mustard
1/4 cup molasses OR dark corn syrup
1/4 cup cider vinegar
Directions
Empty beans into large pot. Mix the rest of the ingredients, add to the beans.
Simmer covered until desired consistency.
NOTE: FIVE #10 cans of pork & beans, and the “sauce” recipe x 2.5,just fits in an 18 quart Nesco roaster with room to stir.
