Recipe given to me by my mother-in-law. It makes a lot of muffins.
Difficulty: Easy
Servings: more than 12
Prep Time: just for mixing altogether Cook Time: 25 minutesIngredients
2 cups All Bran
2 cups Bran Flakes
4 large Shredded Wheat Biscuits
1 cup sugar
4 eggs
1 cup shortening
5 cups flour
5 teaspoons soda
1/3 teaspoon baking powder
1/3 teaspoon salt
1 quart buttermilk
Directions
cream sugar,eggs, shortening together.
in seperate bowl place all bran, bran flakes.
pour over the 4 large shredded wheat biscuits 1/2 cup boiling water…then add that to the other two cereals in that above seperate bowl.
add the three cereal mixture to the creamed sugar, eggs & shortening. Than add the flour, soda, baking powder and salt to that whole mixture along with 1 quart of buttermilk. Mixing on low speed with a mixer until all mixed together. Fill cup cake tins half full and bake at 400 degrees for 25 minutes.
This mixture can be kept in fridge 3 weeks and bake off as many as you like at given time. Be sure to stir when taking out of fridge. I always cook the whole batter off and cool them and place in freezer and take out what we want for any meal.
