This is a recipe that I received from a neighbor. My husband is not a blueberry fan but loves this pie recipe.

Servings: 8
Ingredients
2 9″ regular pie shells
1 stick of butter, room temp.
4 eggs
1 1/2 cups sugar
4 tablespoons of flour
2 3oz. cream cheese, room temp.
2 teaspoons lemon juice
pinch of salt
1 pint blueberries
Directions
Prepare two 9″ pie shells, thawed. Prebake with sugar sprinkled in the bottom for 8 to 10 minutes. Cream cheese and sugar well, then beat in eggs. Add flour, lemon juice, pinch of salt and butter, mix well. Put a little over one cup of blueberries in the bottom of the pie shell, then pour in custard. Bake at 325 degrees for 40-50 minutes or until top is light brown. Let cook and set before serving.

If I made these without the crust and with Splenda instead of sugar, they would be low-carb.

Sorry everyone – I added vanilla by mistake. There is not vanilla in this recipe. “K” they are very easy to make!
