A co-worker brought this one day and we all enjoyed it. This uses a lot of summer vegetables and is quick and easy to make.

Prep Time: 30 minutes Cook Time: 15 minutesIngredients
16-oz Box of Penne or Rotini Pasta
1-3 Tbsp. Basil Pesto
1 Small Onion – finely diced
1 Clove Garlic – minced
1 Tbsp. Olive Oil
Veggies – asparagus, broccoli, 2 small zucchini – sliced, 2 small yellow summer squash – sliced, 3 peppers (red, yellow, green), or other favorite veggies, 1 pint diced tomatoes
1 lb. Turkey Kielbasa – sliced ¼” thick
Directions
Boil: 1 Lb of pasta until done. Drain thoroughly. Put the pesto in a large glass or ceramic bowl, then pour in the drained pasta. Mix thoroughly and set aside.
Saute: the onion and garlic in olive oil until onion is translucent. Add veggies (except the tomatoes) and sauté until tender. Add the tomatoes long enough to heat them up (5 to 10 minutes).
Saute: the kielbasa and then blend into the vegetable mix.
Combine: the kielbasa/veggies into the pasta and mix well. Add more pesto as desired.
HINT: Use a really LARGE bowl.
