My Mom had an Oregon Pioneer Cookbook and this recipe was featured. As a seven-year old, I was immediately drawn to it for it read 1 lb. of this, 1/2 lb. of that. It featured chocolate chips AND M&Ms! How could you go wrong? I soon realized that the largest mixing bowl we owned would NOT hold all of the ingredients. This recipe is halved and still makes a large batch. After all these years I still wonder how the early Oregon Pioneers were able to bring M&Ms with them on the Oregon Trail…
Difficulty: Easy
Servings: 4 dozen
Prep Time: 20 minutes Cook Time: 10-12 minutesIngredients
3 eggs
1 1/4 c. brown sugar
3/4 t. vanilla
1 c. sugar
2 t. baking soda
1/2 c. butter
1 1/2 c. peanut butter
4 1/2 c. oatmeal
3/4 c. chocolate chips
3/4 c. M & M’s
Directions
Combine eggs, sugars, soda, butter, and peanut butter until well mixed. Add the oatmeal interspersed with the chocolate chips and M&M candies.
Use an ice cream scoop to form balls of dough (they should be around the size of golf balls). Place the dough on a cookie sheet with plenty of space between each cookie. Cookies will spread! I average nine cookies per tray. Bake at 350 degrees for 10-12 minutes.
