My husband who does not like eggplant LOVES this. I was surprised at how good it really is.

3/4 C Red Pepper Sauce (recipe below)
2 medium-large baby eggplants, cut crosswise into 3/8” thick slices
1/4 tsp. salt
Freshly ground pepper
8 slices bread, toasted
4 oz. goat cheese

Red Pepper Sauce:
1/4 C walnuts
1 T dry bread crumbs
1 garlic clove, minced
1 tsp. cumin
1/8 tsp. crushed red pepper
1 jar (7oz) roasted red peppers, drained and rinsed
1 T lemon juice
Directions
Eggplant:
Make red pepper sauce.
Preheat grill or broiler.
Lightly apply oil to both sides of eggplant and season with salt and pepper.
Grill or broil 4-6 minutes per side.
Spread 1 1/2 T red pepper sauce on bread slice. Layer eggplant and goat cheese. Top with bread slice.

Red Pepper Sauce:
Combine walnuts, bread crumbs, garlic, cumin, crushed red pepper and salt in a food processor.
Add roasted red peppers and lemon juice.
Process until smooth.
Will keep covered in refrigerator for up to 4 days.
