Recipe given to me by my mother-in-law years ago. We like them because I can put in freezer bags and take out amount wanted.
Difficulty: Easy
Servings: 12-18 muffins depending on size you make
Cook Time: 25 minutesIngredients
2 cups all bran
2 cups bran flakes
4 large shredded wheat biscuits
1/2 cup boiling hot water
1 cup sugar
4 eggs
1 cup solid shortening
5 cups flour
5 teaspoons soda
1/3 teaspoon salt
1/3 teaspoon baking powder
1 quart buttermilk
Directions
Combine the cereals, pouring 1/2 cup hot water over the shredded wheat biscuits (separately) first. Cream together the sugar, eggs, and shortening. Add remaining dry ingredients and the buttermilk. Add to creamed mixture.
Mix well. You can make up the amount of muffins you want at one time, be it one or two, or bake the whole mixture and put muffins in the freezer. Mixture is supposed to keep in fridge for three weeks. Stir it well before using if you keep mixture in fridge.
