By this time of year people are starting to get a little tired of zucchini bread, and zucchini casserole, and fried zucchini and zucchini in their breakfast cereal….well, okay, maybe not that, but it sure feels that way. I was looking around for something else to do with the glut of zucchini that we had and I hit upon a recipe for zucchini pizza–individual pizzas using large zucchini rounds as the “crust” instead of bread. It was easy, used a lot of zucchini, and the kids actually loved it! This recipe is gluten-free and easily made vegan.
Zucchini Pizza
1 large zucchini
2 cups pizza sauce
mozzarella cheese
assorted toppings of choice
olive oil
salt and pepper to taste
Slice the zucchini into 3/4-inch thick rounds, drizzle with olive oil, salt and pepper, and cook in a 400-degree oven just until soft and a little browned. Top zucchini rounds with sauce, other toppings, and cheese then pop back in the oven until the cheese is melted and browned a bit.
