Just tried this this morning, it was great. Didn’t have the Tabasco, added salsa after it was done. I halved this, & we will still have left overs for breakfast the rest of the week. Thinking of slicing it thin & putting in a burrito for the hubby to eat on the go.

Servings: 5-6 large servings
Cook Time: 35-40 min.Ingredients
2 lbs sausage, hot, regular or sage or a mix
1 green bell pepper chopped
2 small onions chopped.
15 eggs (3 per person)
5 dashes Tabasco sauce
Salt & Pepper to taste
1 lb grated cheese
1 12 ounce bag refrigerated hashbrowns
Directions
Brown sausage, remove from skillet,drain. Put the onions & chopper pepper in skillet, brown lightly. Set aside. Beat eggs & add Tabasco. Add salt & pepper. Lightly grease or spray 13 X 9 casserole dish. Layer in this order. Sausage, onions & peppers, hash browns, half of cheese, eggs, rest of cheese. Bake 375 for 35-40 min. until eggs are set & cooked through out.
