I truly don’t remember where I found this but it’s been in my files for two years. I still haven’t made it but it sure sounds good 🙂

Servings: 24 Servings
Cook Time: 40-45 minutesIngredients
* 2 pkgs. “JIFFY” Corn Muffin Mix
* 4 eggs
* 2 cups stewed squash – liquid drained
* 2 Tbsp. margarine or butter
* 1 medium onion, chopped
* 1 cup cottage cheese
* 1/4 cup milk
Directions
Preheat oven to 350°, grease 13″x 9″ pan.
Melt margarine or butter in skillet. Sauté onion until tender; do not brown. Blend all ingredients together well. Pour into prepared pan.
Bake 40-45 minutes.
