Even spinach “haters” will eat these yummy Spinach Balls. Great for a potluck or picnic too since they are good served at room temperature also.

Servings: 12 as appetizers
Ingredients
2 pkg. frozen chopped spinach (10 ounces each)
6 eggs, beaten
1 large onion finely chopped
3/4 cup melted butter
1/2 cup grated parmesan cheese
1 Tbsp. minced garlic
1/2 tsp. ground thyme
1 Tbsp Accent (Dede’s note – is MSG, you can omit)
2 cups Pepperidge Farm or similar stuffing mix
Directions
Cook spinach according to package directions and drain VERY well (press water out w/fork or wring in tea towel).
Combine all ingredients and mold into small balls. Bake at 350 degrees for 20 minutes. Can also be molded into larger balls and use as a side dish at dinner.
