Quick and easy seafood soup.

2 Tbsp olive oil
1 large onion, chopped
2-4 garlic cloves, minced
4 (6 1/2-ounce) cans chopped clams, undrained
1 lb cleaned, cooked crab (or imitation crab)*
1 lb cleaned, cooked shrimp*
1 Family size can condensed tomato soup
2 (2-ounce) jars pimentos, undrained
3 1/2 cups hot water
1/2 tsp salt
1/8 tsp pepper
1/2 tsp dried basil, crushed
1/2 cup fresh parsley or cilantro, chopped
Parmesan cheese (optional)
*Can substitute crab or shrimp with 2 (6 1/2-ounce) cans, drained and rinsed.
Directions
Heat oil in a 6-quart saucepan at medium-low heat. Add onion and garlic; saute until onion is transparent. Add clams with liquid, crab, shrimp, tomato soup, pimentos with liquid, water, salt and pepper. Add basil and parsley; stir. Cook for 20 minutes until heated through. Serve with grated Parmesan if desired.
