This yummy side salad offers a delightful blend of flavors and textures.

1 bunch broccoli
1 bunch green onions (or 1 tsp. onion powder)
1/2 cup grated cheese (Mild Cheddar, Mozzarella or a Cheese Blend works well)
1/2 cup sliced almonds or chopped walnuts
1 3-oz. pkg. Ramen Noodles, Chicken or Oriental flavor
2 Tbsp. white granulated sugar
1/2 cup extra virgin olive oil
2 Tbsp. apple cider vinegar
Directions
Wash and cut broccoli into small pieces. Wash and chop onions. Mix broccoli, onions, cheese and almonds or walnuts. Crumble Ramen noodles into mixture; reserve the Ramen Noodle flavor packet. In another bowl, combine sugar, oil and vinegar with the flavor packet. Mix well. Pour over broccoli mixture. Let flavors blend for at least 30 minutes.
Note: We have onion allergies in our family. For some reason, onion powder does not cause the same reaction as onions, perhaps because it is broken down during processing and the offending agent is neutralized. I frequently substitute onion powder for onions so those with allergies can eat certain dishes. For this recipe, use 1 tsp. onion powder (not onion salt) for the bunch of green onions.
