We had this as a main dish often, growing up. Mom got the recipe from her mother and I added the cheese after I started making it on my own. You could leave out the ham and/or cheese for a side dish.

6 medium potatoes, peeled and thinly sliced
1 onion, thinly sliced
Salt and pepper, to taste
2 Tbsp flour
4 Tbsp butter
Milk
1/2 pound ham, sliced
1 cup shredded cheese
Directions
Place potatoes and onions in greased casserole dish in 3 layers.
Each of first two layers:
Place 1/2 of the ham pieces on top of the potatoes/onions. Sprinkle 1/3 cup cheese on top of the ham. Sprinkle 1 tablespoon flour, salt/pepper, and 2 tablespoons butter.
Add the 3rd layer of potatoes/onions.
Add milk until it can be seen between the slices of potatoes.
Add the rest of the cheese.
Cover and bake in 350F oven for about 1 hour. Uncover and continue baking for another 15 minutes to brown. The potatoes should be fork-tender.
