An great alternative to fried chicken.

Servings: makes about 18 pieces too much for two people but not enough for 4 people.

3 chicken thighs
4 chicken drumsticks
salt and pepper to taste
1 Tablespoon of saved poultry or bacon fat
Directions
Cut the meat from the bones of thighs and drum sticks. Arrange them in a baking dish. Season with salB and black pepper. Add the fat.
Bake at 350 until golden brown.
