A potato and ramp soup. Canned or frozen ramps may be used.

6 medium potatoes
1 c. diced cooked ham
1/2 tsp. pepper
1 c. chopped ramps
2 small onions
2 tsp. salt
2 c. milk
3 rounded Tbsp. of flour
Directions
Peel and dice potatoes and onions. Cook with 3 cups of water, diced ham, salt and pepper until the potatoes are well done. Add one cup chopped ramps. (Both tops and tubers may be used if ramps are young) Add 2 cups of milk, plus the flour blended with part of the milk. Bring just to a boil.
