A quick and easy pastry that makes great turnovers or pocket sandwiches. Can be used with sweet or savory fillings. Freezes well and will keep in the fridge for about a week.
Difficulty: Easy
Servings: About 6 or 8 turnovers
Prep Time: 10 minutes Cook Time: 20-25 minutesIngredients
3 cups flour
1 cup butter
1 cup cream
Directions
Rub/cut butter into flour.
Add cream and work lightly into a ball.
Wrap in plastic wrap and chill in the fridge for about an hour. This is a very soft dough, but if it is too sticky, you can add a bit of flour.
Roll cold dough to about 1/8″ thick. Cut into approximately 6″ rounds and fill as desired, using about 2 tablespoons of filling. Fold edges together and seal with fingers or fork. Bake filled turnovers at 350F for about 20-25 minutes.
If you want to make fruit turnovers, use a thick pureed filling. Dried fruit (rehydrated and sweetened) works well for this as does thick applesauce. Savory fillings I have used include cooked chicken mixed with chive cream cheese; also scrambled egg, ham and cheese is tasty! Experiment! This is a great way to use leftovers and it makes great travel food, too.
