I had some fresh vegetables and a lot of pork in my fridge so I thought I’d experiment and threw a few things together and to be honest it came out pretty good (at least I thought so LOL). I had to freeze some because I had a lot left over.

Prep Time: 30 mins (more or less) Cook Time: 30 minsIngredients
broccoli florets finely chopped (the amount you use is up to you , depending on how much you like broccoli
2 stalks of celery chopped
5 med or 10 baby carrots sliced
3 leaves of bok choy finely sliced
1 green bell pepper chopped
2 cans of vegetable broth (if you use bouillon cubes just follow the instructions, you can use more vegetable broth depending on how much you’re making)
5 small potatoes cubed
2 cups of water (use more or less depending on what kind of vegetable broth you use)
pork stew meat (cut into small chunks)
1/4 -1/2 cup worcestershire sauce
salt and pepper to taste
Directions
Spray a pan with nonstick cooking spray and heat over low-med heat. Add pork meat and cook for about 5 minutes or until pork is done. Fill a pot with vegetable broth (either bouillon cubes or canned) add water, bring to a boil and add pork. Meanwhile chop your vegetables and potatoes and add to the pot once it reaches a boil. Reduce heat and simmer 30 minutes or until vegetables are tender. Add Worcestershire sauce during last 5-10 minutes of cooking and stir.
