This recipe came from my grandmother who immigrated from Poland in 1924. I have ate them my whole life. They are great with sauerkraut and kelbasa.

10 eggs
2 cups water
2 cups flour
2 tsp. salt
oil
small curd cottage cheese
i stick butter
Directions
Beat eggs and water in a large bowl until light and foamy. Add flour and salt. Batter will be very thin. Heat a large frying pan, brush with oil. Add batter to cover pan, when set, turn over. When bottom is covered in small brown dots, remove to a plate. Spoon approx. 3 TBS. cottage cheese in center, fold in sides and then ends. Place seam down in 13 x 9 pan. Repeat with the rest of the batter. You should have twelve rolls. Cut butter into 12 pieces, place a piece on each roll. Cover pan with foil. Bake at 350 for 30 – 45 minutes until butter is melted and the rolls are heated through.

Add just a bit of sugar to the filling, roll them up like an enchilada, pour some apricot syrup over and you also have some REALLY good eats! IHOP served these back in the day when they had a huge selection of syrups. I became an addict!
