Ours is a VERY busy household. Two teenagers who play different sports, a mom who works full time (that would be me…), a dad currently pounding the pavement, a bunch of critters. Lots going on all the time. We are also involved in school and community theater and recently that has really put us over the top. Getting everyone fed every evening between practices, rehearsals, and performances is quite a challenge and anything that claims to be easy and reasonably healthy quickly catches my eye.

Recently that eye-catcher was a recipe for 3,2,1 Cake. Desserts are pretty popular around here and baked goods are at the top of the list. We don’t have them as often as we’d like because: A) They take time to make; and B) Since we are in and out so much, the second half of most things we do make often ends up being fed to the chickens…. Not that they mind, but it’s not really frugal, and along with time, money is frequently in short supply. So, when I received this recipe in an email, I just had to try it. Everyone, except maybe the chickens, is glad I did! Now any one of us can have a yummy dessert at any time and pretty much guilt-free too!!

How to make 3,2,1 Cake:

1 box of angel food cake mix
1 box of any other flavor cake mix
water

Yep, that’s it!! Mix the two cake mixes in a large zip top bag or the container of your choice. When someone wants cake put 3 tablespoons of the mix into a coffee mug. Add 2 tablespoons of water. Stir until all the mix is moistened. Place in the microwave and cook for 1 minute on high. Voila….. Cake! Turn onto a small plate and top with whipped topping if you choose. Or sprinkle with a little powdered sugar. Or do as my oldest does and add a scoop of ice cream. Mmmmmmm, warm cake, cold ice cream.

We are currently eating our way through a dark chocolate/angel food mix. Next time I think I’m going to try carrot, or spice.

    It’s really genius! Wish I’d thought of it 😉 One of my daughters suggested dropping a couple of mini chocolate chips into the mug….will have to give that a try soon. I’m thinking there are a bunch of ways to gild this lily~~~

    ACK!! Just looked this over and saw a typo!!! 3 Tbs. mix, 2 Tbs. of water, 1` minute in the microwave….that’s why it’s 3,2,1!!!

    This will be perfect when I am in need of something sweet. Can top with fat free whipped topping too. yum!!! I don’t think not much fat in it. Will try this soon. Thanks for recipe!!!!!!!!!!!!

    I’ll have to try this one for sure. I tried a brownie in a mug once and it was fun to watch in the microwave–it puffed all up about 3 inches over the top of the mug, then settled back down to brownie consistency. Thanks for the recipe!!

    I have a ziploc bag of this in my pantry. When the kiddos come home from school they have this on occasion. I have angel food with devils food. I found this on pinterest. So easy, even the kids can make it.

    Just came across the same recipe, tried it with strawberry cake and angel food. It is delicious!! Was informed by a friend in Weight Watchers that it is worth 2 points on the points plus program if you are counting calories:)
