This recipe came from one of the moms (Mrs. Glatz) in the neighborhood I grew up in. She states in the recipe, that it was given to her Grandmother in 1911 her Grandmother’s Aunt. These are fantastic cookies!
Difficulty: Intermediate
Servings: About 2 dozen, depending on how large you cut them.
Ingredients
1 c. sugar
1c. lard
2 eggs
1 c. molasses
4 Tbsp boiling water
2 tsp. soda
1/2 tsp. baking powder
1 tsp.salt
1 tsp. ginger
1/2 t. cinnamon
1 Tbsp. vinegar
1 tsp. vanilla
4 1/2-5 cups flour or enough to make soft dough
Directions
1) Cream sugar and lard. Beat in eggs. Add molasses and 1 cup flour. Set aside.
2) Mix about 2 cups flour with baking powder, ginger, cinnamon and salt.
3) Pour 4 Tbsps. boiling water over soda in small dish.
4) Add flour mixture, soda and water, vinegar and vanilla to cream mixture and mix well.
5) Add enough flour to make soft sticky dough. Chill. Roll our and cut. Sprinkle with sugar and bake (or bake and frost)
Bake in 400* oven until finger touch leaves no imprint in cookie.
Tastes best if left several days. Nice for animal Christmas cutouts.
